A super simple salad recipe for summer. The recipe serves 1-2 people. 

Ingredients

  • 2 cups of watermelon chunks
  • 1/4 cup cubed feta cheese
  • 2 tablespoons of Kalamata olives
  • 1/2 red onion
  • 1 cup salad greens
  • 1 tablespoon of olive oil
  • 1 squeeze of lemon juice
  • salt and pepper to taste

Method

  1. Toss watermelon chunks with salad greens
  2. Add cubed feta, thinly sliced onion and Kalamata olives
  3. Combine lemon juice and olive oil. Toss through the salad and season it with salt and pepper.
