INGREDIENTS
- 2 cups of watermelon chunks
- ¼ cup cubed feta cheese
- 2 tablespoons of Kalamata olives
- ½ red onion
- 1 cup salad greens
- 1 tablespoon of olive oil
- 1 squeeze of lemon juice
- salt and pepper to taste
METHOD
- Toss watermelon chunks with salad greens
- Add cubed feta, thinly sliced onion and Kalamata olives
- Combine lemon juice and olive oil. Toss through the salad and season it with salt and pepper.
