INGREDIENTS
- 1 cup cous cous
- 1 cup boiling water
- 1 tablespoon olive oil
- 1 cucumber, diced
- 1 red capsicum, diced
- 1 cup cherry tomatoes, halved
- ½ red onion, finely chopped
- ¼ cup fresh parsley, chopped
- ¼ cup fresh mint, chopped
- 2 tablespoons lemon juice
- Salt and pepper to taste
METHOD
- Place cous cous in a bowl, pour over boiling water, cover and let stand for 5 minutes.
- Fluff cous cous with a fork and drizzle with olive oil.
- Add cucumber, capsicum, cherry tomatoes and onion.
- Stir through parsley and mint.
- Toss with lemon juice, season with salt and pepper, and serve.
