INGREDIENTS
- 1 packet puff pastry sheets (thawed)
- 1 cup crumbled feta cheese
- 1 cup mashed potato with caramelised onion (optional alternative filling)
- 1 cup cooked spinach, chopped
- 1 egg, beaten (for brushing)
- 1 tablespoon sesame or nigella seeds (for topping)
- Salt and pepper to taste
METHOD
- Preheat oven to 190°C and line a baking tray with parchment paper.
- Cut puff pastry into squares and place 1–2 tablespoons of filling in the centre.
- Fold into a triangle or rectangle shape and press edges with a fork to seal.
- Brush the tops with beaten egg and sprinkle with seeds.
- Bake for 25–30 minutes until golden and crisp.
- Serve warm and enjoy.
